Breakfast Enchiladas! Enchiladas for Breakfast! These potato chorizo enchiladas with guajillo chile sauce and fried eggs will blow your enchilada-loving mind. Easily made vegetarian, too!

If you’re lazy and/or “time frugal” you can use frozen hash brown potatoes for the boiled potatoes. No need to thaw (in fact, don’t) just mix right in with the other stuff and bake for an extra 10 minutes.

  1. Hilah, el queso cotija we usually serve it on top of the sauce when it's served, not in the filling just thought I let u know how we usually serve it in Mexico, but u can do whatever u want it's your kitchen haha.

  3. Holy shit that was amazing ! Kinda late on the vid comment. But i just seen it. While i was stalking ur delicious ideas! You know i use to cook the potatoes with the chorizo. This time i did them separate ( i don't mind the work) .. Omitted the cotija but added monetary only cuz thats what i had… Yummy town
